
I hadn’t had a gyro in 6 months. There’s no logical reason why I hadn’t but it’s the truth. I was needing to scratch that itch so bad. So I researched the hell out of Greek gyros and since it was right in the middle of the 2020 pandemic and lamb was hard to come by, I decided to go with the chicken gyros variety. I loaded up my Instacart with all the ingredients and in less than a day I was in gyro bliss…
While traditional gyros are usually made with lamb and roast for hours and hours, not everyone has the time for that! So going for chicken is an easy way to go for the ever so slightly healthier gyro fix. You can cook this on the grill, a stove top pan (I suggest cast iron), or even in your oven.
The marinade is the real star of the show here and that’s how you’re getting all of these awesome Greek flavors. The tangyness of the Greek yogurt paired with the simple spices are a one-two punch to flavor town.
Load up your chicken gyros with tzatziki sauce or hot sauce or both! This makes a perfect lunch or dinner any time of the year. You can pair it like I did with a Mediterranean salad. I did however switch out the olives for avocado since they were in season.

Greek Style Chicken Gyros
Ingredients
Chicken
- 750 grams chicken thighs boneless
Marinade
- 280 grams Greek yogurt
- 40 grams lemon juice about 1 medium lemon
- 25 grams extra virgin olive oil
- 30 grams apple cider vinegar Balsamic, red wine, or any darker vinegar will work
- 5 cloves garlic
- 10 grams salt
- 10 grams black pepper
- 5 grams oregano
- 3 grams paprika
- 3 grams cumin
- 3 grams coriander
- 3 grams cayenne pepper to taste
Gyro toppings
- 1 pita bread
- 1 tomato
- 1 cucumber
- 1 green pepper
- 1 red onion
- 85 grams spring mix
Instructions
- Mix the marinade by combining all marinade ingredients
- Place boneless chicken thighs in marinade. Cover and refridgerate at least 30min.
- Prep other gyro toppings by slicing tomato and cucumber into cubes, and the green pepper and onion into strips.
- Grill chicken on a grill pan over medium high heat for 5 min on each side or until done. Let rest 5-10min and cut into cubes or strips
- Warm your pita bread, add chicken and top with your gyro vegetable ingredients

- You can also grill the chicken outside or bake in a 400F degree oven for 20min
